The Purist Pet Nat 2022

This delicious, naturally sparkling wine makes a great start to any event. Great on its own, but also pairs well with lighter dishes such as seafood and poultry. The use of 100% Margaret River Gin Gin clone chardonnay results in a wine that offers complex pear and citrus characters with a clean lingering crisp finish.

The ideal serving temperature is around 5C.

The Purist Natural Chardonnay 2021. Aged on Lees.

This wine displays a complexity and depth of flavour that surprises many, given that the wine has not been oaked. Made from 100% Margaret River Gin Gin clone Chardonnay. The grapes were crushed, gently pressed and allowed to ferment entirely on natural yeasts and proceed through malolactic fermentation. The wine is a clean expression of pure Chardonnay with complexity derived from high fruit quality, natural yeasts, malolactic fermentation and autolysis from its extended lees contact. The wine displays intense citrus characters and finishes long and clean. It can be enjoyed on its own or paired with a wide range of foods from seafood, goats cheese and even lamb.

The ideal serving temperature is around 10 – 12C.

The Purist Cabernet Merlot 2021

This delicious wine is combination of 50% Cabernet Sauvignon and 50% Merlot from a single block of vines growing on iron stone gravel soil in Rosa Brook, Margaret River. The wine derives its rich berry complexity from handpicked, fully ripe fruit, gently crushed and fermented entirely on its own natural yeasts with extended skin contact and basket pressing. The wine is then aged for 6 months, to allow it to settle and clear prior to bottling. No fining or filtration is used, allowing all the subtle and interesting flavours to remain. Cabernet tannin is restrained and balanced by the softness of the Merlot. The aroma opens after a period in the glass, displaying fresh berry characters. The wine has not been oaked in any form and does not require extensive bottle ageing. Designed to be enjoyed young or aged for up to 12months. Enjoy on its own or pair with a full range cheeses and meat dishes.

Ideal serving temperature is 17 – 18C

The Prospector Cabernet Sauvignon 2018

This outstanding wine owes its unique rich character from being sourced from a single block of vines planted in iron stone gravel. It is Margaret River Cabernet at its very best.

The Stickler Shiraz 2018

This elegant wine derives its aromatic and peppery character from being sourced from a single block of vines growing on a rocky ridge. 2018 was a hot summer and the resulting wine is rich, ripe and full flavoured.
